JOB DESCRIPTION

Hotel Rottnest and Samphire Rottnest has an exciting opportunity for a Chef De Cuisine to assist in the leadership of the Kitchen Brigades. Working closely with the Executive Chef, you will be enthusiastic, motivated and able to work well in a very fast paced environment. Having worked in a similar role within the hospitality industry, you will be a team player with excellent communication skills and attention to detail.

The successful candidate will be responsible for:

Role descriptions:

  • Effectively work within the prescribed food styling across the individual outlets to deliver consistent products which results in positive direct and social media feedback.
  • Ensure that you remain current in terms of culinary trends and present those that are relevant to the hotels financial and profile expectations.
  • Be an active member of the hotels marketing team and contribute in a positive manner to building new revenues and profile.
  • Effectively manage, lead and inspire the Kitchen Brigade to deliver on the yearly KPI targets, and those as determined throughout the course of year.
  • Effectively assist in the delivery of the monthly prescribed Cost of Sales “COS” per budget and forecast expectations.
  • Effectively assist in the delivery of the monthly prescribed Wage Cost per budget and forecast expectations.
  • Deliver a consistent and timely product in line with approved presentation throughout the year.
  • Assist in the delivery of a minimum of two major seasonal menus which are fully costed and tested in line with the prescribed menu roll out process.
  • Assist in the delivery of additional menu changes as requested from time to time within the above format.
  • Assist in the delivery of two major C&E & BQTs menus in support of the hotel’s diverse venues.
  • Work to support and showcase local product where it meets the styling criteria.
  • Ensure that the hotels kitchens and storage areas are maintained and in line with Health WA guidelines and food handling practices.
  • Be an effective member of the hotels Workplace Health and Safety management team.
  • Provide a safe environment for all persons entering the kitchen and greater stores areas.

Eligibility Requirements:

The candidate must have the following essential attributes to be considered:

  • 10+ years’ experience as a chef.
  • 3+ years’ experience as a Sous Chef.
  • A Passion for food.
  • A sense of purpose through your culinary skill.

  • Great culinary skills.
  • Driven and can drive others to excellence.
  • Exposure & management experience in large format F&B venues.
  • Enjoys a fast-paced environment.
