About the role

This role requires a high-energy professional to lead a dynamic team committed to excellence in supporting a great variety of events from corporate meetings to sell-out shows for 900, and cabaret style dining for 500 covers.

The right candidate will be an industry professional who is self-motivated, and able to work within a team environment, achieving the highest standards for internal and external catering services.


Reporting directly to the Operations Supervisor, the focus of this position is to:

  • Manage and support the day-to-day operations of the Food, Beverage & Events team of Shoalhaven Entertainment Centre, including, Encore Café & Bar, pre-show dining, off-site catering, and event planning and coordination.
  • Ensure processes and protocols are in place for the Food, Beverage & Events team’s compliance with all relevant legislation and Council policies; and ensure risks are managed
  • Deliver excellent hospitality and front of house services to venue patrons and hirers
  • Further develop the Centres catering and bar operations as a professional, efficient and sustainable service within resourcing and budget parameters
  • Assist in developing strategies to leverage growth in food and beverage sales, and leading operational efficiencies and sustainability
  • Supervise the Centre’s planning and execution of all event

Skills & Experience

In order to be successful in the position, you will be/ possess:

· Tertiary qualifications in hospitality or equivalent with relevant work experience and/or extensive experience in coordinating food and beverage services, event planning and financial reporting in a hospitality environment

· Demonstrated relevant function, café and bar experience including planning, promotion, service coordination, supervision and administration responsibilities

· Demonstrated creativity in hospitality service planning with proven experience in complex problem-solving, time-based project management and multi-tasking

· Demonstrated experience in delivering professional customer service to a broad client base

· Shift flexibility and availability to work a wide range of hours

· Food Handling and Responsible Service of Alcohol certification

· Capacity to become manager of the Centre’s liquor licence

· Class C Driver’s licence
