The Moonee Valley Racing Club is looking for an experienced Restaurant Manager to manage the day-to-day operational functions of TOTE Bar & Dining. This includes all culinary, beverage and service operations. The role must develop, innovate and deliver excellence that drives TOTE Bar & Dining to be a world-class food and beverage venue. 

About us

The MVRC conducts up to 26 race meetings each season, and The Valley is home of the Ladbrokes Cox Plate – ‘The Race Where Legends Are Made’. The Club also stages over 350 non-raceday events each year at The Valley.

In 2018, the Club launched Dean & McPherson and partnered with PGA Tour to deliver the 2018 World Cup of Golf, the 2019 Vic Open and the 2019 Presidents Cup at Royal Melbourne Golf Club. Dean & McPherson has also recently secured an exciting 5 year partnership with the Royal Agricultural Society of Victoria (RASV) to deliver an all-new food and beverage offering at Melbourne Showgrounds which has already commenced. Our hospitality portfolio also includes three gaming and entertainment venues: Legends, The Junction Club & The Leighoak.

The Valley is set to embark on a $2B redevelopment of its landmark 98-acre site which is situated in Moonee Ponds – just 6kms from the Melbourne CBD. The transformation has commenced, with construction underway on the first residential release, and the recent completion of Tote Park. In 2025, the Club will build the new Valley Racecourse, multi-purpose grandstand, and develop the racecourse infield with a wide range of community recreational facilities.

Moving into the most exciting era in the Club’s rich history, in 2021 we will unveil TOTE Bar & Dining as a destination venue within the Moonee Valley Park precinct.

TOTE Bar & Dining will soon be the new heartbeat of Moonee Ponds, just 6kms from the CBD; it is Melbourne’s newest and most unique social offering. About the role

Key responsibilities of the role include but are not limited to the following:

  • Facilitate the operational plan for TOTE Bar & Dining including but not limited to food & beverage, menu development, recruitment of key talent, service excellence, client and stakeholder management.
  • Deliver culinary, beverage and service operations that exceeds the expectations of our customers.
  • Develop and deliver TOTE service standards, team guidelines, operational standards and TOTE way of life.
  • Prepare annual budgets and forecasts across for TOTE Bar & Dining.
  • Achieve monthly financial performance targets and implement actions to ensure achievement of financial targets for TOTE Bar & Dining.
  • Achieve TOTE Bar & Dining COGS, wages, expenses and profitability margin targets.
  • Ensure the connection between food, beverage and all service elements are fully aligned and all focused on delivering exceptional experiences at TOTE Bar & Dining.
  • Provide strong leadership of the team and promote a positive culture with high engagement.

To effectively perform this role, the successful candidate must possess the following skills, experience and qualifications:

  • 5+ years' experience in senior-level hospitality role with a high focus on quality & profitability, preferably in a restaurant.
  • An engaging leadership style, a positive attitude, resilience and strong communication skills.
  • An exceptional understanding of what it takes to run a profitable business as well as exposure to commercial negotiations and a proven track record in leading high performing teams.
  • Exceptional time management, methodical planning, organisation, and a great eye for detail.
  • A desire to constantly exceed guest expectations and a passion for continuous improvement.
  • A passion for leading from the front and being hands-on in their leadership style.
  • Experience in successful people management practices; Ability to lead, manage, train and mentor a team of full time, casual and part time staff.
  • Food Safety supervisor qualifications and Food Allergens Certificates.

You must be prepared to work outside the spread of normal hours with availability to work across the week, weekends and public holidays when required.
