JOB DESCRIPTION

With Crown Sydney setting a new benchmark in Sydney’s dining scene we are now looking for a suitably experienced and passionate Chef De Cuisine to guide the team to achieve new heights in culinary excellence in our fine dining modern Cantonese Cuisine restaurant at Crown Sydney. This is will not be a standard Chef De Cuisine role as you will be encouraged to deliver creative and delicious menus that showcase the very best in Cantonese cuisine with a modern and sophisticated flair. Reporting to the Chinese Executive Chef, you will be required to train & mentor your team whilst liaising with a wide range of stakeholders including senior level management. Your advanced time management, organisational and task delegation skills will ensure an efficient daily kitchen operation.

Key duties of this position will include:

  • Creation of modern enticing Cantonese menus using the latest techniques to create a memorable experience for our guests
  • Have a flexible approach to be able to offer a bespoke dining experience
  • Management of a large and diverse team of Chefs and Environmental Service Attendants
  • Strict compliance to Crown’s HACCP program
  • Financial accountability to ensure the operation is profitable
  • Building strong relationships with the management group, colleagues and suppliers

Key selection criteria:

  • Advanced knowledge of Cantonese cuisine is essential
  • Experience in high end Chinese restaurants
  • Demonstrated experience in a high volume and high expectation environment
  • Knowledge of the latest trends in the industry to execute bespoke menus to our VIP guests
  • Advanced team building skills to ensure a seamless operation
  • Ability to create innovative menus for a different experience to the traditional norms
