JOB DESCRIPTION
DoubleTree by Hilton Perth Waterfront is seeking a passionate and talented Head Chef to lead our busy kitchen operations. Situated in a prime position on the edge of the stunning Swan River, the hotel adjoins Barrack Square and the Elizabeth Quay precinct. The 229 room hotel boasts stunning panoramic river and city skyline views. This stylish full-service and new-build hotel is home to Reel Kitchen, 18 Knots Rooftop Bar and picturesque banquet facilities.
Reporting to the Hotel Manager, our Head Chef will oversee the operational management of the hotel’s kitchen and will be fully responsible for developing the reputation of the hotel through the production of excellent quality food.
Key Responsibilities Include
- Inspire your kitchen team, displaying exemplary behaviour at all times and a hands-on approach to leadership
- Encourage your team, using a variety of recognition materials and tools
- Be innovative, continually looking for ways to wow our guests and challenge the team to create exciting and contemporary menus
- Ensure the consistent production of high-quality food through all hotel food outlets
- Develop positive customer relations through interacting with our guests and being the face of the kitchen
- Develop sound and long-lasting relationship with our suppliers, ensuring a win-win scenario
- Encourage sound relationships based on trust with other departments in the hotel
- Manage department operations, including budgeting, forecasting, resource planning, food costs and waste management
- Manage all aspects of the kitchen including operational, quality and administrative functions
- Actively seek verbal feedback from customers on a regular basis and respond to all guest queries in a timely and efficient manner
- Ensure adequate resources are available according to business needs
- Control costs without compromising standards, improving gross profit margins and other departmental and financial targets
- Ensure team members have up-to-date knowledge of menu items, special promotions, functions and events
- Ensure that staffing levels are maintained to cover business demands
- Recruit, manage, train and develop the kitchen brigade, constantly building a highly engaged and productive team
- Comply with hotel security, fire regulations and all company and state health and safety and food safety legislation
- Ensure maintenance, hygiene and hazard issues are dealt with in a timely manner
- Be environmentally aware and constantly looking for ways to decrease our environmental footprint
- Previous kitchen leadership and management experience (preferably 5 years or more) in a full-service hotel of a similar size
- Substantial and successful history of excellent leadership, communication & stakeholder management skill
- Proven track record of successful kitchen operation through food cost & payroll management
- A creative approach to the production of high-quality food and menu planning
- Ability to multi-task and meet deadlines
- A current, valid, and relevant trade qualification (proof may be required)
- Proven ability to recruit, motivate and train successful teams
- A degree-level qualification in a management-related field (advantageous)
