Food & Beverage Operations Manager
Working alongside and reporting directly to the General Manager-Rydges Esplanade Resort Cairns is seeking a Food & Beverage Operations Manager.

Lead by example; hands-on approach to serve our guests and manage the overall Food and Beverage operation–responsible and accountable for every aspect of the Restaurant, Bar, Weddings, Conferences and Events.
Grow revenue, maximise performance, business transformation to maximise profitability.
Coach, train, develop and empower the F&B team to ensure service standards are met.
Position Requirements
Work in/manage operations at all times–Restaurant, Bar, Wedding, Conferences and Events. Lead from the front, working predominately evenings and when required for Weddings, Events and Conferences.
Ensure continued adherence with all COVID Safe and WPHS procedures/policies.
Maintain hygienic food handling and RSA practices at all times.
Motivate, lead and inspire a well-structured team to provide consistent outstanding service and guest care to achieve service and business goals and financial budgets.
Lead, manage and undertake all tasks/projects within Department.
Maximise profitability by identifying and implementing revenue generating ideas.
Maximise profitability by recognising and proactive implementation of cost saving initiatives.
Develop Annual Business Plan/Financial Budget;
Compile necessary reports as required.
Monitor market trends and adapt.
Identify areas of growth and improvement.
Provide concepts with sale team to drive success. Develop promotional activities.
Be Customer Obsessed. Provide efficient, friendly and professional service at all times.
Resolve customer complaints. 
Review and respond to guest feedback. Implement solutions to specific service problems.
Personnel & Training.
Undertake all staff recruitment and interviews.
Conduct regular performance reviews and training.
Host Food & Beverage Meetings.
Implement strategies to maintain motivation and reduce staff turnover.
The successful applicant will possess the following:

  • Bachelor degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality or related major
  • Responsible Service of Alcohol
  • At least 7 years’ experience in restaurant supervisory / management roles across 4 – 5 star establishments, with at least 3 years’ Restaurant Manager level
  • Strong experience preparing financial forecasts and reports, as well as operational reports including commentary on KPIs and strategy
  • Demonstrated experience recruiting, training and developing a team of Food and Beverage employees to deliver a high standard of service in line with hotel standards while maintaining high morale
  • Ability to develop and implement strategies to achieve sales and labour cost budgets and targets
  • Ability to drive food and beverage sales and knowledge in developing and implementing promotional activities and strategies
  • Excellent knowledge of statutory compliance obligations regarding liquor licensing, WH&S and council
  • Track record of compliance and continuous improvement
  • Highly motivated and sales driven
  • Passionate and committed to a high work ethic and professional standard, including a high standard of personal presentation
